QUIET REBELS: MATTHEW (LIMITED EDITION)

For our sixth Quiet Rebels release, Matthew, our blender spends much of his time in the warehouse tasting casks and dreaming up future whiskies. Before joining Nc’nean, he spent years bartending in London which sparked a particular love of dry sherry, so for his release he wanted to create a whisky that celebrated just that. The result is a sweet and salty whisky, packed with flavours of popcorn, pineapple cake and toasted hazelnut.

The stars of this whisky are Manzanilla hogsheads sourced from our long term cask partner, José y Miguel Martín in Jerez, where they were seasoned for a minimum of 24 months. When Matthew first tasted them, they took him by surprise. Rather than the dry and austere character he had expected, they were sweet, salty and wonderfully moreish. Blended with Bourbon casks and just a touch of Oloroso sherry cask, they create a beautifully textured whisky with richness, freshness and plenty of tropical fruit.

Every bottle is made using 100% organic Scottish barley, made in our distillery which is verified net zero carbon emissions (scopes 1 and 2) and bottled in a 100% recycled glass bottle.

Bringing them together with Bourbon and a little Oloroso created something rich, textured and really moreish. Before joining Nc’nean, Matthew spent years behind the bar in London, creating cocktail menus and exploring flavour across the city’s drinks scene. It was here that his love of sherry really took hold, along with an appreciation for unusual combinations, great spirits and doing things a little differently

Now our Blender and in-house photographer, Matthew spends plenty of time in the warehouse tasting casks and dreaming up future whiskies. Outside of whisky, he’s a big cinema fan, loves running, flying drones and making videos. That mix of curiosity, creativity and a willingness to explore the unexpected makes him a natural Quiet Rebel.

Cask breakdown: 47% Manzanilla hogsheads, 51% Bourbon casks and 2% Oloroso sherry casks. The Manzanilla hogsheads were sourced from José y Miguel Martín in Jerez and seasoned for a minimum of 24 months.
