This Quiet Rebels release is Simon's pick. Simon is a beer fanatic. He enjoys anything from a light pale ale to a deep heavy stout, especially if it’s been aged in a whisky barrel. So for his release we’ve partnered with Scottish brewing legends Innis & Gunn to curate a buttery, chocolatey stout cask whisky with a hint of baking spices.

The whisky in this bottle was initially aged in shaved, toasted and re-charred red wine casks, before being finished in 100% stout casks from our friends at Innis & Gunn. In a great twist too, those Innis and Gunn stout barrels also originally held Nc’nean! A delicious full circle. This cask exploration felt particularly apt for Simon’s dream bottling, with warehouse and cask stewardship being his favourite part of the job.

Our whisky makes a big impression with the smallest footprint. Every bottle is certified organic, made in our verified net zero distillery (scopes 1 and 2) and bottled in a 100% recycled glass bottle.

“I didn’t take the typical route into whisky, I started out as a chef, then spent years walking the length of New Zealand and North America, even picking up some beekeeping skills along the way. It’s been a winding path, but it’s led me to a role I really love. Working with casks and looking after the warehouse is where I feel at home now. I’ve always been drawn to the journey each cask goes on, and using casks that came from Innis & Gunn’s brewery felt like the perfect fit for my release.” Simon

First and foremost, however you like! Simon likes his stout cask just the way it is, but if he's feeling adventurous, he also likes a half n half - a single serve of his 100% stout cask whisky, alongside a glass of golden ale. He suggests the Red Kite from Black Isle Brewery.

Simon is one of the team’s longest serving distillers and is married to Sarah who leads Nc’nean’s bottling operation. Given they started here at the same, their Quiet Rebels release has launched in tandem. You can find out about Sarah’s release here.

The married couple’s journey into whisky was not via the typical route. United by a shared love of adventure, they have tackled two of the world’s most iconic long-distance trails: the 2,190-mile Appalachian Trail in the USA and New Zealand’s 1,900-mile Te Araroa, which stretch almost the full lengths of their respective countries. It was Simon and Sarah’s love for all things remote and wild, as well as Nc’nean’s ethos of pioneering sustainable production, that lead them to the Morvern peninsula. Now settled here, former chef Simon enjoys cooking with fresh ingredients from their garden and Sarah spends her time running up the local hills and wildlife spotting, with both enjoying a good party to balance it all out.
