MORNING GLORY FIZZ

Ingredients
50ml Organic Single Malt Whisky
25ml lemon juice
20ml 1:1 sugar syrup (easy recipe below)
15ml egg white
1 dash Absinthe
20ml soda water
Lemon twist to garnish

Method
Add all ingredients apart from the soda water to a cocktail shaker,
then fill with cubed ice and shake hard for 12 seconds.
Fine strain in a chilled highball glass,
then add the soda water and garnish with a lemon twist.
You can easily whip up the sugar syrup at home by shaking equal parts caster sugar and water in a jam jar until all the sugar is dissolved (warm water helps speed things up).
