Ingredients
50ml Organic Single Malt Whisky
20ml pear shrub (recipe below) or Botivo
100ml soda water
Thyme sprig to garnish

Method
Fill a highball glass with cubed ice and add all the ingredients.
Gently stir then garnish with thyme sprig.
To make a pear shrub, simply combine equal parts sliced pear, caster sugar and cider vinegar. Leave for an hour, then press and filter through cloth. Keep in the fridge for one month.
