Ingredients
50ml Botanical Spirit
25ml lemon juice
20m 1:1 sugar syrup (easy recipe below)
15ml egg white
20ml soda water
Thyme sprig to garnish

Method
Add all ingredients apart from the Soda Water to a cocktail shaker,
then fill with cubed ice and shake hard for 12 seconds.
Fine strain in a chilled highball glass, then add the Soda Water and garnish with thyme sprig.
You can easily whip up the sugar syrup at home by shaking equal parts caster sugar and water in a jam jar until all the sugar is dissolved (warm water helps speed things up).
